This "steak" of fish has a firm texture and so is fantastic placed right on the grill as a steak or in kabobs. Its color can vary in hue from rosy to orangish depending on its diet and where it was caught. Either way, it is superb. Substitute grilled swordfish for tuna for a kudos-deserving salad!
